Chicken Fajita Skewers
Grilled skewers are the ultimate BBQ dish. Easy to make, satisfying to taste and simple to carry around the garden as you chat to friends. Here at Bridgewater we love this easy recipe for classic chicken skewers with a fun Mexican twist. Check out the recipe, get down to Dunnes Stores for your ingredients and fire up that grill!
1 pound boneless, skinless chicken breasts
2 tablespoons oil
Zest and juice of 1 large lime
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 clove garlic, chopped
1 jalapeño, chopped
1/2 teaspoon salt
1 large red bell pepper
1 large green bell pepper
1 large red onion
Salsa, sour cream (or plain yogurt), and guacamole
Cut the chicken into bite-sized pieces. Place in a zip-top bag.
In a small bowl, whisk oil, lime juice and zest, chili powder, cumin, garlic, jalapeno, and salt. Pour over the chicken, seal bag, the gently squish the bag to coat chicken. Place the bag in a baking dish and refrigerate for 30 minutes. If using wooden skewers, soak the skewers in water first.
When ready to cook, heat your grill to medium-high. Cut the peppers and onion into chunks, add to skewers with marinated chicken pieces.
Place the skewers on the grill, cover, and let cook until the chicken is no longer pink, about 6 to 8 minutes, turning the chicken to cook evenly.
Remove the chicken kebabs to a serving plate and sprinkle with coriander and a few squeezes of fresh lime juice. Serve warm with salsa, sour cream and guacamole.
Delicious Foil Wrapped Potatoes
You can’t beat potatoes are as BBQ side dish and this crowd pleasing recipe ticks all the boxes! Made with baby new potatoes, this dish can be made in bulk to serve up to friends and family.
750g miniature new potatoes
2 tbsp olive oil
Put your baby potatoes into a large saucepan of cold water and some salt and bring to the boil. Once boiling, cook them for about 5 mins until slightly tender.
Drain and leave them to sit for 2 mins to let the extra water evaporate. Transfer to a large sheet of tin foil, coat in the olive oil and season well with salt, pepper and your favourite spices. Make sure the potatoes are sitting flat against the foil so each one gets charred when you start to grill them. Wrap up the potatoes in the foil like a parcel, and wrap again to ensure the potatoes are completely covered. Cook on the barbecue for another 10 mins or so until cooked through.
Carefully remove from the foil and serve alongside your favourite BBQ dishes.
